Ralph Brennan Serves Up Seafood Cookbook

NEW ORLEANS - Since Hurricane Katrina, a spate of new cookbooks has added to the already extensive catalogue of New Orleans recipe guidebooks, capturing the national fondness for the city and its epicurean legacy.

These include books issued by celebrity chefs Susan Spicer and Emeril Lagasse and restaurants such as Uglesich’s and Galatoire’s.

Today, another has been added to that list with the release of Ralph Brennan’s New Orleans Seafood Cookbook.

The 432-page manual includes recipes by chefs at four Ralph Brennan’s restaurants: Red Fish Grill, Bacco, Ralph’s on the Park and Ralph Brennan’s Jazz Kitchen at Disneyland. It will retail for $45 at major booksellers and online at www.ralphbrennancookbook.com.

Ralph Brennan, owner of the Ralph Brennan Restaurant Group, said his new cookbook is the end result of an idea first planted about a decade ago when a Brennan’s employee heard food writer John Mariani comment at the city’s annual Tennessee Williams Literary Festival that “the definitive New Orleans seafood cookbook has not been done.”
